Funky Spicy Shakshuka with Feta Cheese

Ingredients:

  • 4 eggs
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 can (14.5 oz) diced tomatoes
  • Salt and pepper, to taste
  • 1/4 cup crumbled feta cheese
  • Fresh parsley, chopped, for garnish

Directions:

  1. Preheat oven to 375°F.
  2. In a large oven-safe skillet over medium heat, heat olive oil. Add onion and red bell pepper and sauté for 5-7 minutes, until softened.
  3. Add minced garlic, ground cumin, smoked paprika, and cayenne pepper to the skillet. Stir to combine and cook for 1-2 minutes, until fragrant.
  4. Add diced tomatoes to the skillet and bring to a simmer. Cook for 5-7 minutes, until the sauce has thickened slightly.
  5. Crack the eggs directly into the skillet on top of the tomato mixture. Season with salt and pepper.
  6. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the eggs are cooked to your liking.
  7. Remove the skillet from the oven and sprinkle crumbled feta cheese over the top.
